


The salentinian kitchen:
It's a traditional kitchen handed down from generation to generation, that preserves and proposes the taste of the old culinary art. The salentinian kitchen is a tasty, essential one, tied up to the typical products of its earth: it is famous for the high quality of the genuine products as bread, oil of olive, pasta and sweets, well known abroad too. Among the first dishes there are: the 'pasta casereccia' done by hand; 'maccheroni and orecchiette' seasoned with passed of fresh tomato, perfumed by basil, pecorino cheese or ricotta cheese, pasta with steamed tops, rice with sea fruits or with mushrooms, potato dumplings . Among the second dishes we remember: veal meatballs, bits of horse meat cooked in crock pots, roasted lamb, there are also a lot of typical dishes based on fish and sea fruits as soups and fried food. The taste of the dishes is flavored by the oil of olive. It is usually exalted by the characteristic and famous wines of the Salento. It's absolutely important not to forget to taste the typical local sweets as the 'copeta', a mix of almonds and candied sugar, the 'mostaccioli' and the pasta of almond.
